About Egg Handling

  • You do not need to wash farm-fresh eggs. In fact, washing eggs removes a protective protein layer, called a bloom. This bloom comes from the hen and it protects her eggs from bacteria. You can store unwashed eggs at room temperature for 2 weeks (not more than a month).
  • Dirty shells can contaminate clean cooking areas, utensils, hands and even food.
  • If you have dirty eggs from your chickens and they need cleaning, it is best to clean their nesting boxes and lay fresh straw or wood chips.
  • If you must wash them, do so in warm running water. Warm water rinses off any bacteria. 90 degrees is recommended. This causes the contents inside the egg to expand, pushing out contaminants and bacteria, from the egg shell pores. Cold water can encourage the bacteria deeper in the shell.. Dry the eggs gently with a towel or paper towel. Refrigerate once dry in a closed container (egg cartons are best), as eggs can absorb the smells in your refrigerator and it also prevents breakage. Refrigeration also reduces the risk of salmonella.
  • Farm fresh eggs can be kept in a fridge for 3 months (no longer than 6).
  • The simplest way to test if an egg is fresh, is to place it in a glass of cold water. If they sink to the bottom and lay on their side, they are still fresh. If they remain at the bottom but standing up, they are not that fresh but still edible. If they float, they should not be eaten.
